My love and I spent the weekend with our friends Craig and Emily up in the mountains. For the occasion, they reinvented their wedding signature cocktail with an interesting variety of gin—Corgi Spirits® Earl Grey Gin. This New Jersey-based distillery has certainly designed a spirit made for my afternoon tea-loving heart. -C

Earl Grey Collins
Ingredients:
2 oz. Corgi Spirits® Earl Grey Gin
3/4 oz. fresh lemon juice
1/2 oz. simple syrup
2 oz. club soda
lemon twist for garnish
Directions:
1. Shake together gin, lemon juice, and simple syrup in ice for 20 seconds.
2. Strain into a high ball or martini glass ice.
3. Add club soda and garnish with lemon twist or wedge.
Notes:
This can be made into a punch bowl with the quantities as follows: 24 oz gin, 12 oz. lemon juice, 18 oz. simple syrup, and 24 oz. club soda. Makes about 2.5 quarts of punch. Pour over a 5 lb. bag of ice.
