Piña Colada Popcorn

This recipe is a summer movie night tradition that comes from Grandma and the “church ladies.” We thought it would be perfect for the launch of the Hamilton: An American Musical on Disney+ this weekend as a nod to his Caribbean roots. You may end up in a duel with a relative over the last kernel at the bottom of the bowl.

Piña Colada Popcorn

Ingredients:
8 T. (1 stick) butter
2/3 cup sugar
1/3 cup light corn syrup, such as Karo
pinch of salt
1 T. coconut extract
1 T. pineapple extract
1 cup corn kernels, popped (makes 8 quarts plain popcorn)

Directions:
1. Pop the corn kernels, set aside in a very large bowl.
2. In a small saucepan, boil the butter, sugar, corn syrup, and salt together for 2 minutes. It will bubble up a bit.
3. Remove from heat and add in extracts. Stir to combine.
4. Drizzle over popped popcorn in the largest bowl you own. Toss with two wooden spoons (like a salad) to coat every piece of popcorn. Eat immediately.
