With Mom sick again (screw you Cancer), and even though I have essentially moved in after getting fully vaxxed, we still get take out-to go quite a bit. I fully anticipate this tactic to slow down when the semester ends. (How is it that Zoom and working remotely has made it feel like we do *more* work these days?)
I arrived this week to help take care of mom now that I’m fully vaxxed. Bring on the real food! I whipped up a quick dill chicken salad with mandarin oranges and melted cheddar on top under the broiler and put the whole thing on a toasted open-faced sandwich. Simple salad with our favorite balsamic vinaigrette and a dusting of goat cheese crumble. #betterthanhospitalfood
It’s difficult to post on BlueWillowKitchen when I’ve been getting so many wonderful meals lovingly made and dropped off on our porch by an army of angels. This nummy homemade cookie was packed in a chemo lunch that arrived last night. The support and generosity has been overwhelming. I have now completed half of my infusions and hanging tough.

This recipe has ruined many, many a dinner for me. White Christmas Crunch is a highly addictive, mindless-snacking black hole in which I have been very pleased to get lost in. Thankyouverymuch.
As Mom gets ready for another round of chemo to start tomorrow, I set about organizing her kitchen pantry. Does a well-organized pantry help fight cancer? I don’t know, but if she opens it and does not feel the agita of not finding something, I’ll take it.
