I’m EMBARRASSED to say how long my mother has made Cheesy Scramble on Christmas morning and I, being a picky eater kid, refused to sample. I’m in recovery now and will sing to the mountaintops how great these eggies are. What’s on your menu for Christmas Breakfast? It will be the first Christmas without Mom this year. Nobody seems to have an instruction manual for making it through a time like this. So here’s my plan… keep as many old favorites as possible. For many years, Mom made Apricot Glazed Sausages every Christmas morning (and only on Christmas morning) and her mother made them every Christmas morning since she could remember.
When we visited Highclere Castle in July of 2019, back when the world was right-side-up, one of the most breathtaking parts of the tour, at least for my husband, Greg, was that in behind Highclere Castle during the touring season they set up a bar which had Pimm’s Cup on tap. The next day, amidst the crush of Borough Market in London on a Saturday, we found a vendor selling entire pitchers of Pimm’s Cup for 20 quid. This post is the attempt of replicating the feeling of both sipping Pimm’s Cup whilst strolling through the gardens at Highclere Castle, and enjoying a take away lunch under the overpasses at the bustling Borough Market in London in the summer.

You may be wondering what has happened to us. We are happy to report that I am slowly emerging, scars and all. Caroline went remote for a few weeks and came up to help around the house when things were getting a bit dicey.
With Mom sick again (screw you Cancer), and even though I have essentially moved in after getting fully vaxxed, we still get take out-to go quite a bit. I fully anticipate this tactic to slow down when the semester ends. (How is it that Zoom and working remotely has made it feel like we do *more* work these days?)
