This recipe is a slightly sweet substitute for traditional clotted cream. We use this as an element in many recipes. With the addition of sugar and vanilla, it is a versatile “condiment” that can be slathered on scones or used as a filling in tarts and cakes. Consider this as an alternative in case the grocery store is out of the real deal, or you don’t have 24 hours to make your own clotted cream. -E

Clotted Cream Alternative
Ingredients:
1 cup heavy cream
2 T. confectioner’s sugar (can use superfine or caster sugar)
4 oz. mascarpone cheese
1/2 t. vanilla extract
Directions:
1. Pour the whipping cream in a chilled stand mixer bowl.
2. Add the vanilla and sugar. Let it sit 5 minutes to let sugar dissolve.
3. Add the mascarpone cheese and mix on low speed until blended. Then increase the speed of the mixer and beat until the mixture begins to hold its shape and looks like softly whipped cream.
4. Use immediately or cover and refrigerate until serving time.
Notes:
Yields approximately 2 cups.
