Summer in a jar! This easy-method of canning is a great afternoon activity after a morning of strawberry picking for kids and makes a welcome gift at holiday time. -E

Strawberry Freezer Jam
Ingredients:
3 1/4 cups crushed berries (can use strawberry or raspberry)
1/4 cup lemon juice
2 oz + 3/4 t. powdered pectin
1 cup light corn syrup, such as Karo
4 1/2 cups sugar
Directions:
1. Mix crushed berries and lemon juice together and add pectin. Stir until well blended and let sit for 30 minutes, stirring the mixture one or two turns every 5-10 minutes during this time.
2. Add corn syrup and sugar. Stir and watch as jam will begin to set. You may need to let the mixture sit for a while to ensure all the sugar dissolves.
3. Pack into twelve (12) sterilized half pint jars, making sure that there is enough headspace (3/4″) for expansion. Freeze until ready to open, keep refrigerated.
